吴华侠:今天我要做的这个烧麦呢,是玫瑰情人烧麦。

和面呢,是讲究:盆光、面光、手光。你看我们这个面现在还不光呢,我们得放着醒一会。这个面光,手光,还有盆光。把这个切成这个条,合到一起,寓意着绿叶衬红花。然后下成这样的剂子。擀成皮儿。
之后呢,就到了我们的核心,压出花褶,每张皮上必须要求有24个,代表我们中国的24个节气。直径是3.3寸,边薄是0.5毫米,芯薄是1毫米,蒸出来以后就晶莹剔透的。
还有一道也特别重要的流程,就是和馅。先把虾段和虾泥搅拌均匀。虾泥呢,它起到这个粘合作用。里面掺一点鲍鱼粒。加我们的高汤。这个是盐。海鲜的东西比较鲜,尽量呢不要搁太多的调料去把海鲜本身的味道给它掩盖住。少许有一点糖。这是油。最后一个原材料,为了增加这个馅的爽口呢,马蹄。就撒在上边,稍微搅拌一下就好了。
我们高汤就是棒骨、鸡架子、老鸭,熬4个小时,把上边的那层油撇下去,这样吃出来呢肥而不腻的感觉。
